  • 1 cup cooked Quinoa
  • 1/2 cup curly kale, shredded
  • 1/2 avocado, diced
  • 1/4 cup canned chickpeas, drained and rinsed
  • 1/4 cup canned corn kernels, drained and rinsed
  • 1/4 cup red cabbage, finely sliced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup sliced scallion (green part only)
  • 1/4 cup feta, cubed
  • 2 tablespoons cilantro leaves
  • 2 tablespoons basil leaves
