The Most Amazing Seoul Salad with Sweet Sesame Dressing

This Seoul Salad is a sure-fire way to impress everyone at the next BBQ. Who ever thought that Ramen would fit well in a salad?!

Ingredients
Serves 1

  • 2 cups romaine lettuce, chopped
  • 2 cups mesclun greens
  • 1/2 avocado, diced
  • 1/4 cup mandarin orange slices
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup carrots, shredded
  • 1 package dry Instant Ramen noodles
  • 2 tablespoons black and white sesame seeds

Directions

For the Ramen Noodle Salad Topping

  1.  Place the block of dry instant ramen noodles in a ziplock bag and crush the noodles into small pieces using the bottom of a pan or another such tool.
  2. (At this point, you can just skip to the Seoul Salad part, or you can keep going to the next step to make the noodles taste a little nicer.)
  3. Over medium heat, in a large frying pan, sauté the noodle bits in oil until crispy and golden, about 3 minutes.
  4. Transfer to a paper towel-lined plate to cool.

And now, the Seoul Salad

  1. Simply, mix all the ingredients into a large bowl, except for the sesame seeds and ramen noodles. Pour in the dressing, making sure to coat the salad evenly.
  2. Top with the sesame seeds, 1/2 cup of the Ramen Noodle Salad Topping and voila!
