Recipes Using Green Power Dressing
Ingredients
Makes 1 cups (250ml)
- 1/2 cup (7g) basil leaves
- 1 cup (14g) flat-leaf parsley leaves
- 1 teaspoon red onion, coarsely chopped
- 1 big garlic clove
- 1/4 cup + 1 tablespoon Parmesan, shaved
- 1/2 cup Extra Virgin Olive Oil
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons jalapeño hot sauce
- 1 tablespoon red wine vinegar
- 1/2 tablespoon lemon juice
- 1.5 tablespoons mayonnaise
- 1/2 teaspoon Dijon mustard

Directions
- Combine all ingredients in a blender, except for the olive oil. Process on medium-high speed until well combined (15-20 seconds).
- Stop the blender and scrape down the sides of the jar with a spatula as needed.
- With the blender running on slow sleep, slowly drizzle in the olive oil until the dressing is emulsified and thickened, about 30 seconds.
- Add the salt and pepper, adjusting to taste.
- Transfer to and straight container and store in the fridge, where it can be kept for up to 3 days.
