Before you come after me for adding carrots to this Mexi salad, try it. I know carrots aren’t very Mexi, but it gives the salad a nice pop of colour.

Ingredients
Serves 1
- 2 cups romaine lettuce, chopped
- 2 cups mesclun greens
- 1/2 avocado, diced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup carrots, shredded
- 1/4 cup canned corn kernels, drained and rinsed
- 1/4 cup canned black beans, drained and rinsed
- 1/2 cup tortilla chips (any plain salted version will do)
- 2 tablespoons fresh cilantro leaves, torn
- 1/3 cup Cilantro Cumin Dressing

- Combine all of the ingredients in a large bowl and mix.
- Toss in the dressing until salad is well coated.
