Ingredients
Makes 500g of salmon
- 1/3 cup sun-dried tomatoes, coarsely chopped
- 1/2 cup dill fronds
- 2 tablespoons red onion, diced
- 1 tablespoon brined capers
- 1 teaspoon Dijon mustard
- Zest and juice of 1 lemon
- 1 tablespoon balsamic vinegar
- 1 teaspoon fine sea salt
- 3 tablespoons Extra Virgin Olive Oil
- 500g organic salmon fillet, center cut, skin on

Directions
Marinade
- Combine all the ingredients except for the salmon in a blender and pulse until a thick but smooth paste forms.
- Coat the salmon with the marinade and refrigerate for at least 2 hours.
- Preheat the oven to 190°C (375°F).
- Lay the marinated salmon on a parchment-lined sheet tray. Roast for 25 minutes, until the flesh looks firm but still juicy (or internal temperature of the thickest part registers 62°C or 145°F).
- When the 25 minutes are over, remove the salmon from the oven.
- You can either serve it immediately or let it cool at room temperature. It can be stored in the fridge for up to 5 days.
