Recipes Using Green Power Dressing

Ingredients
Makes 1.5 cups (375ml)

  • Small garlic clove
  • 1 tablespoon coarsely chopped scallion (white part only)
  • 2 tablespoons packed basil leaves
  • 1/4 cup packed flat-leaf parsley leaves
  • 2 tablespoons loosely packed tarragon leaves
  • 1/4 cup nutritional yeast flakes
  • 1/2 cup apple cider vinegar
  • 1/2 teaspoon Dijon mustard
  • 3/4 cup Extra Virgin Olive Oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Combine all ingredients in a blender, except for the olive oil. Process on medium-high speed until well combined (15-20 seconds).
  2. Stop the blender and scrape down the sides of the jar with a spatula as needed.
  3. With the blender running on slow sleep, slowly drizzle in the olive oil until the dressing is emulsified and thickened, about 30 seconds.
  4. Add the salt and pepper, adjusting to taste. 
  5. Transfer to and straight container  and store in the fridge, where it can be kept for up to 3 days.
