A classic balsamic dressing doesn’t have to be just balsamic. Spice it up a little… but keep it simple.

Ingredients
Makes 2 cups (500ml)
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 2 teaspoons Dijon mustard
- 1 + 1/3 cup Extra Virgin Olive Oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

Directions
- Combine the vinegar, honey, mustard, and olive oil in a blender. Process on medium-high speed until smooth and well-combined (5 to 6 seconds). Be careful not to over-blend as the dressing can become too thick.
- Add the salt and pepper, and more to taste.
- Transfer to an airtight container and store in the fridge (stays fresh for up to 7 days).
