Ingredients

- 1 cup packed cilantro leaves
- 3 tablespoons lime juice
- 3 tablespoons honey or agave syrup
- 3 tablespoons coarsely chopped ginger
- 3 garlic cloves, minced
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper

Here are two ways to make the dressing. Honestly, they both turn up great, so don’t overthink it. Just do whichever one floats your boat, but do the second one if you wanna impress whoever is watching.
Easy way
- Combine all the ingredients in a blender and blend until smooth.
- Store in an airtight container and keep in the refrigerator. It will stay fresh for up to 3 days.
Fancy way
- In a blender, combine the cilantro, lime juice, honey/agave, ginger and garlic. Blend for about 15 seconds, until the ingredients are coarsely chopped.
- With the blender still running on low speed, slowly pour in the olive oil for 30 seconds. The dressing should slowly thicken.
- Add in the salt and pepper, adjusting the amount to taste.
- Store the dressing in an airtight container and keep in the refrigerator. It will stay fresh for up to 3 days.
