Cajun Shrimp Salad With Cilantro Lime Ginger Dressing

You NEED to try this mouthwatering Cajun Shrimp Salad. The smokey shrimp mixed with the fresh mango, lime and cilantro flavours mix wonderfully.

Ingredients
Serves 1

  • 5 fresh jumbo shrimp, peeled and deveined
  • 1 teaspoon Cajun Seasoning
  • Olive oil OR ghee (for cooking)
  • Juice of 1/2 lime
  • 2 cups baby spinach
  • 2 cups mesclun greens
  • 2 bacon strips, baked until crispy
  • 1/2 ripe mango, diced
  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon torn cilantro leaves
  • 1 tablespoon scallions, sliced (green part only)

Directions

  1. In a small bowl, toss the shrimp with the Cajun Seasoning. In a frying pan over medium-high heat, heat the olive oil or ghee until shimmering.
  2. Fry the shrimp for 2 to 3 minutes, turning them once of twice, then splash wit the lime juice and remove from the heat.
  3. In a big bowl, mix all the ingredients for the salad: spinach, mesclun, bacon, mango, avocado, cherry tomatoes, cilantro and scallions.
  4. Mix in the dressing and top with the shrimp! Yum yum yum.
