You NEED to try this mouthwatering Cajun Shrimp Salad. The smokey shrimp mixed with the fresh mango, lime and cilantro flavours mix wonderfully.
Ingredients

- 5 fresh jumbo shrimp, peeled and deveined
- 1 teaspoon Cajun Seasoning
- Olive oil OR ghee (for cooking)
- Juice of 1/2 lime
- 2 cups baby spinach
- 2 cups mesclun greens
- 2 bacon strips, baked until crispy
- 1/2 ripe mango, diced
- 1/2 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1 tablespoon torn cilantro leaves
- 1 tablespoon scallions, sliced (green part only)
- 1/3 cup Cilantro Lime Ginger Dressing

Directions
- In a small bowl, toss the shrimp with the Cajun Seasoning. In a frying pan over medium-high heat, heat the olive oil or ghee until shimmering.
- Fry the shrimp for 2 to 3 minutes, turning them once of twice, then splash wit the lime juice and remove from the heat.
- In a big bowl, mix all the ingredients for the salad: spinach, mesclun, bacon, mango, avocado, cherry tomatoes, cilantro and scallions.
- Mix in the dressing and top with the shrimp! Yum yum yum.
