This basic dijon salad dressing brings me straight back to that little French bisto around the corner of my Paris flat. Simple, delicate yet rich in flavour.

Ingredients
Makes 2 cups (500ml)
- 2 garlic cloves
- 6 tablespoons apple cider vinegar (ACV)
- 1/4 cup maple syrup
- 1 tablespoon Dijon mustard
- 1 + 1/4 cup Extra Virgin Olive Oil
- 1/2 teaspoon salt
- 1 + 1/2 teaspoon freshly ground black pepper

Directions
- In a blender, combine the garlic, ACV, maple syrup, and mustard. Process on medium-high speed until smooth and well combined, 15 to 20 seconds.
- Stop the blender and scrape down the sides of the jar with a spatula as needed.
- With the blender still running on low speed, slowly drizzle in the olive oil until the dressing thickens, about 30 seconds.
- Add the salt and pepper (or more to taste) and transfer the whole thing to an airtight container. The dressing will stay good for up to 7 days.
