I’ve always been obsessed with fresh herbs, particularly mint… hence this Minty Bless dressing. It tastes as good as it sounds: mint, lime, olive oil.
Recipes Using Minty Bliss Dressing
Ingredients
Makes 2 cups (500ml)
- 1/4 cup apple cider vinegar
- 2 tablespoons agave syrup
- 1 teaspoon Dijon mustard
- Juice and zest of 1 lime
- 1 garlic clove
- 1/4 cup mint leaves
- 1 cup olive oil
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper

Directions
- Combine the vinegar, agave, mustard, lime zest and juice, garlic, and mint leaves in a blender. Process on medium-high speed until well combined (15-20 seconds).
- Stop the blender and scrape down the sides of the jar with a spatula as needed.
- With the blender running on slow sleep, slowly drizzle in the olive oil until the dressing is emulsified and thickened, about 30 seconds.
- Add the salt and pepper, adjusting to taste.
- Transfer to and straight container and store in the fridge, where it can be kept for up to 3 days.
